Low Carb Waffles

2 eggs
2 ounces cream cheese or 2 Tbs homemade mayo

In a blender, toss in both ingredients. Blend until you get a thin and bubbly batter. Let it rest a few minutes while the waffle iron heats up. Pour in batter, close lid and wait until you no longer see steam (about 5 minutes). They don't come out crispy, but will crisp in a toaster or substitute for bread in a grilled ham and cheese. They keep well, so I make extras to have on hand.
