Bacon onion pepper jam Empty Bacon onion pepper jam

Not primal - It’s jam!

Ingredients:

1 lb bacon, chopped

2 large onions, diced

3 cloves garlic, minced

2 chili peppers, chopped (we used orange jalapenos)

1/2 cup apple cider vinegar

3/4 cup water

1/2 cup brown sugar

3 tablespoons maple syrup

1 teaspoon paprika (we used smoked anaheim powder)

Directions:

1. Cook bacon in heavy bottom pot until done but not crisp, drain, save 1 tablespoon fat
2. Saute the onion, garlic and chili pepper in the bacon fat until soft
3. Add water, vinegar, sugar, maple syrup and paprika and add back the bacon
4. Simmer 2-3 hours, or until jammy
5. Pulse in a food processor to the chunkiness/smoothness you like.

Store in fridge or freeze. Not suitable for water bath canning.

This sounds delish E. It's definitely going to make it way into my cooking time. I just need some jalapenos.
