Holiday Recipes
A place to share recipes for Thanksgiving, Christmas, New Year or your favorite holiday.
I’ll start with an attempt to make a dairy free and gluten free green bean casserole. I don’t know when we started having green bean casserole at Thanksgiving. We never had it when I was a kid. It must have snuck in sometime in the ‘90s.
Part 1: French fried onion rings.
2 large yellow or white onions, slice into rings 3/16 inch thick (0.5 cm)
1/2 cup gluten free flour of choice
Salt & pepper
Spray on oil (we used avocado)
Break sliced onions into rings and soak in cold water for 15 - 30 minutes
Season flour with salt and pepper
Shake excess water off of onions and toss in the flour to coat
Shake off excess flour and spread in a single layer on oiled parchment
Spray more oil over the rings - more than you think you need
Sprinkle with more salt - a fine grain salt works best
Bake at 400F for 20-30 minutes, flipping once or twice
The are done when they are golden brown - keep an eye on them, they can burn quickly
Part 2: Cream of mushroom soup.
1 lb button or cremini mushrooms
Oil of choice (we used olive)
2 cans coconut milk
Salt & pepper
Worcestershire sauce
Slice or roughly chop mushrooms
Saute in oil until they give up their liquid and brown slightly
Season with salt and pepper and two dashes Worcestershire sauce
Add coconut milk and simmer a few minutes
Step 3: The Casserole
Four cans (yes cans) cut green beans
The Step 1 onions
The Step 2 mushroom soup
Pepper
Combine the beans, the soup, 2/3 of the onions and a bit of black pepper
Put into a casserole and bake at 350F until bubbly
Sprinkle remaining onions on top and bake 5 minutes more.
This makes a good size dish. Scale up or down as needed.

Thanks for your research ebka! Glad you tried them out. I, too, do not recall when those green bean casseroles began. Makes me wonder.

Sweet Potato Pie
This is gluten and dairy free. It is not necessarily good for you - it is pie.
Almond Gingersnap Crust:
2 cups almond flour
1 egg
2 tablespoons coconut oil
Pinch of salt
2 tablespoons sugar
1 tablespoon molasses
1 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon ground allspice
Pinch of black pepper
Beat egg with oil, sugar, molasses and all the spices
Mix with the almond flour
Press into a 9 inch pie plate
Bake at 350F about 10 to 12 minutes
Sweet Potato Filling:
The filling we use is the one in this recipe from Bob’s Red Mill:

Just follow the filling recipe there using the cooled crust.
We have made this pie many times and it is very good. You can also skip the crust and just make it a sweet potato custard / pudding.
