Thanks to ekba for this recipe:

The fish chowder was pretty simple - onion, celery, potatoes and bacon. The fish was Pacific cod because that was on top in the freezer. A little coconut milk in place of dairy, and the seasoning was salt, pepper, celery salt, cayenne and thyme. Sprinkle of Old Bay at the end.

Some amounts (very approximate):

4 slices bacon, diced
1 medium onion, diced
2 ribs celery, diced
4 medium potatoes, diced
1 lb white fish
1 quart water
1 pint milk or cream or coconut milk
Salt, pepper
Pinch of cayenne, thyme and celery seed

Cook the bacon until crisp, remove for later (snack at will)
Saute onion and celery in bacon fat until soft
Add seasonings and water, bring to boil
Add potatoes, cook until soft
Add fish, simmer until just done
Add milk, cream, coconut milk and heat through
Add what’s left of the bacon back
Finish with Old Bay, or parsley, or chives
