I love this meal! I just bought a huge piece of pork butt on the weekend. I tossed it in the freezer but can't wait to make it. Life is better with pork.

Yesterday we had pizza (I had meatzza and the kids and hubby had Italian pizza). After the fire in our pizza oven had burned down a bit - I put this this caserole with pork chops in the warm oven. They have been spiced up with celery salt, sweet smoked paprika, garlic powder and cummin. They've been cook g for almost 24 hours. Wiĺl be eaten w. Baked cauliflower and a big ass salad

The smartest thing the Instant Pot folks did was remove the words "pressure cooker" from the equation. I applaud their marketing savvy!

Tonight was Moroccan spiced meatballs in tomato sauce and roasted cauliflower. Very tasty - and enough sauce left to use on chicken thighs tomorrow.

You're welcome.
No issues with the green ones? Or other veggies? Since the white ones are only available temporarily I enjoy them while they are. Mostly eating what the seasons provide, not too strict during winter months though...

Yesterday grilled chicken filet w. salad of sun flower shoots and cucumber, olives, avocado, feta cheese, olive oil and balsamic vinegar.
Today the same except chicken filet have been swapped for thighs and the dressing is ceasars and the cheese is parmesan.

New to me tender porkchops
I am a very recent convert to brining meat, although I have been brining veggies for years. Anyway, I accidentally left a couple porkchops overnight in my brine, when the usual time is 2-3 hours in the fridge. Let me tell you, seared in ghee and sprinkled with magic mushroom powder ( from Nom Nom Paleo), then briefly cooked, they were yummy. And tender! Probably the tenderest meat I have eaten in years. Yet some from the same package were dry and chewy the day before. I won't be brining turkeys any time soon, but chicken breasts getting the treatment might just change my mind about the dry stuff I've choked down for years. Just don't overbrine them, or they may end up slightly too salty when the mushroom seasoning is added.
