Spring, and at last sunshine here in the UK. And the wild garlic is up and flourishing. I shall be going out today to gather bags of it - some to make soup, some for sauces and some to freeze so I can make wild garlic pesto later in the year. With a little chicken stock, lots of wild garlic and a little cream it makes an AMAZING sauce to go with chicken. Any other tips for foraging / saving wild food most appreciated!
