boiled eggs and lemon juice
Hi All,
The organic eggs I purchase are really fresh and very hard to peel when I boil them. So I added a bout a tablespoon of lemon juice to my boiling water for my and that worked.
Question: is there any nutritional damage by doing this?

I don't know about the lemon juice but do a Google search for "Julia Childs Hard Boiled Eggs" and maybe give that a shot. I works every time for me for easy to peel eggs, no grey ring on the yolks, even cooking. It sounds like a pain but soooo worth it!

I never heard of the lemon juice trick, that sounds worth a try. It is so hard not to use those eggs when they are fresh, I always forget they will be hard to peel until I am doing it.

Tip: make boiled eggs easier to peel

I found a wonderful reference where a lady tested all the different ways to make hard boiled eggs easier to peal:

Hmmmm. Boiled for 14 minutes. Mine would come out hard as a rock!

1 Large Egg:
Glycemic Load: 1
Carbohydrates: 0.6 grams
Calories: 77.5 KCal
This is her summary (with a few of my notes added).
1) Don't worry about how old your eggs are
2) Add 1 Tablespoon of vinegar to approximately 4 cups of water (lemon juice works too)
3) Drop the eggs into the water after it's already boiling. Gently boil for
14 minutes. (Note: I do 8 minutes for two dozen eggs)
4) Chill the eggs in an ice bath right away when they are done (I use icy tap water)
5) Peel the eggs as soon as they're cool
