Has anyone tried these? They are potato chips with only three ingredients. I think they taste delicious, especially with salsa.

I have. DD found them on day over the summer. They do taste good, but I won’t buy them. Too risky to eat too many at one sitting

Despite their using good oils and being non GMO, potato chips are still far from a health food. But if you've got to have some, better these than crappy Lay's!
Potato chips are on my "abandoned" list. I think I last ate them in 2013. I've never seen your Boulder brand in the stores, but do see some now that are fried in coconut or olive. Never been tempted

I believe potato chips count as a resistant starch food, so they have that going for them. I tend to avoid them though, too hyperpalatable.

I think of them definitely as a "sensible indulgence" (can't stand the word cheat), not going to pretend they are in anyway nutritious. But I feel like I can definitely snack on them without feeling guilty.

I dont believe so. They're high in AGE's and worse yet, 3-4% RS isn't worth crowing over, I wouldn't really call something as high in RS unless it has 1:3 RS+fiber to digestible carb.
Which IMHO, pan fried pop corn with coconut oil could get there. Hi Maize is 44% RS, I wonder what that would be like cooked in coconut oil and cooled.
