Black Angus Beef Burger with leftover mash & oven roasted cauliflower, both with Parmesan, sautéed bell pepper/onion mix.
And Ontario, regarding already having started the meal: I prep the food, put it on the plate, take a picture (or sometimes 2), savour it all while it's still hot & tasty, and then post a message here...

Thanks. We do eat plenty of veggies and like to vary them to keep meals interesting & tasty.
That's probably because it was celeriac (celery root) instead of celery ... cooked & mashed with cauliflower or white potatoes... very nice to pair with game meat.
Also tastes great when served with Parmesan.
On second thought... you can always use/add celery to the mash/puree... clean (remove strings) and slice into half moons, then simply pan/stirfry celery for a few minutes or cook for about 10 (or use raw when preferred) while the potatoes/cauliflower or both cooks. Mash with butter and/or milk, s/p/nutmeg. Add celery. Pairs nicely with bacon/mustard/apples/walnuts/goat cheese in whatever combination you prefer or have available... eat as is or with meatballs/sausage/pork chop etc. on the side.
You can use lots of different (root) veggies as base for the mash too... for example celeriac/parsnip/turnip/rutabaga or (butternut) squash. All lower in carbs than potatoes. Or a combination of any of these.

Friday I roasted a large duck, so roast duck with masses of veg. Then I made a stock with the duck bones, giblets etc and used some of that to make a sort of "ragu" with some of the left over duck, covered a casserole filled with that with sliced potatoes and cooked them until the potatoes were soft and going crisp. Lovely. This evening will be a spicy duck stew with loads of veg and sweet potatoes.

Saturday Dinner: Marsala Chicken with some panfried potatoes and sautéed pak/bok choi.
Basically chicken/mushrooms/shallot/Marsala wine/cream/garlic/thyme/s/p.

RigD, I've had an instant pot for about 4 years now (have 2 in fact! Only use 1 usually). It's the BEST THING I've bought for my kitchen - it's used every day, pretty much. And it needs only the amount of liquid needed to bring it to pressure, so often hardly any, as mushrooms, onions etc release liquid too. Fab!

By the way, that recipe I posted about for Chicken Korma was DELICIOUS! And it was so easy. Just brown the chicken and toss everything in the InstantPot on slow cook. If you want, you can also make a side of cauliflower rice to complete the dish.
